
Research has shown that the meat from bison is a highly nutrient dense food becuase of the proportion of protein, fat, minerals and fatty acids to its caloric value. Comparisons to other meat sources have also shown that bison has a greater concintration of iron as some of the essential fatty acids necessary for human well being.

Grilled Bison & Roasted Vegetable Skewers

In medium bowl, combine bison, craker crumbs, cilantro egg white, feta cheese, olives, salt, cinnamon, black pepper and garlic. Mix until well blended. Shape into 8 large meatballs. To prepare a skewer: altermate 4 bell peper squares and 2 meatballs per skewer. Repeat process makig 4 skewers.
To barbecue: Allow coals to burn down to ash grey. Barbecue bison and vegetable skewers for 5 minutes. Turn, baste bison skewers with flavoring sauce and grill 4-5 minutes longer or until done. Baste vegetable skewers with flavored oil and grill 5-7 minutes longer or until tender.

Savory Bison Oven Roasted Meatballs

In medium bowl combine all ingredients. Mix until well blended. From into 24 meatballs about the size of a large walnut. Spreay a jelly roll pan with non-stick cooking spray. Place meatballs on pan. Roast in reheated 400°F oven for 10 minutes.
